Sweet Zucchini Relish by Alberto's

Alberto's wife's recipe.  It’s sweet but you feel the freshness. Our award winning zucchini relish is the perfect side to a sandwich, a sweet relish and a chow chow.

It is meant to be a side dish like a sweet pickle but can be used as a sweet relish or chow chow. We make chicken salad with chicken, mayo, red grapes cut in half, sliced almonds and zucchini relish – it is delicious. The zucchini and corn relish is a great combination in pasta salad.  It is delicious in tuna and potato salad.
